                                 Christmas Cake Recipe 

Hi Friends!👋 I hope you are doing well. Today's recipe is gonna be very special for Christmas. This season is so exciting and precious time all over the world. This cake makes this season more delightful.  I always used to make it for Christmas in my childhood. I used to try it to preserve it. 
I have been with people who were very expert to make Christmas cakes and they knew how to preserve them. I learned about this cake from them. So I decided to share it with all of you. Let me show you little bit history of this recipe.

In England, Christmas cake is a tradition that began as plum porridge. People ate the porridge on Christmas Eve, using it to line their stomachs after a day of fasting. Soon dried fruit, spices, and honey were added to the porridge mixture, and eventually, it turned into Christmas pudding.

The Christmas cake as we know it comes from two Christian feast days: Twelfth Night and Easter. When families in the sixteenth century made their Christmas puddings for the big day, they would often use some of the mixtures, with the addition of flour and eggs, to bake and eat for Eastertime.

This is the secret behind a slightly bitter taste, as the dry fruits are soaked in alcohol for months, opened only closer to the time of baking.

You may not be aware of this but plum is great food and can help you in fighting off acne and reduce its scars as well. Its antimicrobial and anti-inflammatory properties work wonders for your skin.


Ingredients;-
Unsalted Butter         1 cup ( cubes at room temperature)
Brown Sugar             1 Cup
Large Eggs                3 ( at room Temperature)
Orange Juice             1/2 cup
Brandy                   2 tbsp
Lemon Zest            1 Tsp
Orange Zest            1 Tsp

Dry Ingredients:-
All Purpose Flour     1, 1/2 Cups
Almonds                1 Cup ( Crushed )
Baking Powder       1 Tsp
Baking Soda             1/2 Tsp
Cinnamon                1 Tbsp

Nuts 
Dried Fig                2 Tbsp
Walnuts                    1/2 Cup
Pistachios                1/2 Cup
Ceshows                 1/2 Cup
Big Raisins             1/2 Cup
Blue Raisins            2 Tbsp
Red Raisins            1/2 Cup
 

Directions:-

Prepare the 8-inch pan with parchment or butter paper with oil and grease it with butter. 

Now take a mixing bowl and add butter, beat it a little bit then add brown sugar and make a fine paste. It should be well-combined. Now add three large eggs at room temperature one by one and mix them well in the batter. 


Now add orange juice, and mix well. Now add brandy, if you don't have or don't want to use it the best substitute is fresh grape juice for this cake. It is used for its preservation and rich flavor. It will also give the cake nice brown color. Now add lemon and orange zest and mix properly.

 Secondly, prepare the dry ingredients. In another bowl add all-purpose flour, and crushed almonds and mix well. 

Add baking powder, baking soda, and Cinnamon powder and mix well. Mix all in the cake batter. It is good to mix with your hands. So there should be without lumps.



Leave three or four Tbsp of the dry mixture in the bowl for the nuts because the nuts will not stick in the bottom when you mix the dry ingredients. They will equally spread in the whole cake batter. This is my experience when I was learning. So use this trick whenever you make this kind of cake.
 Now add all nuts to the rest of the flour and mix well. I have chopped all the nuts so that they will mix well. After mixing them nicely add them to the batter with your hands. The batter should be well combined, and it should be without lumps. Then the cake will be smooth and spongy.😉
 

Now add this smooth and super moist batter into the prepared pan. Spread it with a spatula all over the pan. Garnish it with Almonds, Ceshows or may you can use chopped mixed nuts ( raisins Walnuts, etc )  
I m going to garnish the cake with ceshow slices. 
In the main while preheating the oven to 180 

°

C for 15 minutes. Now bake the cake at 170 

°

C for  30 to minutes. Last 10 minutes low the temperature and switch on the upper rod for its color.  
After baking the cake remove it from the pan by using a knife, release it from the edges, and remove it. Place it in the frame and let it cool down completely. When it's cold down then poke it with a knife or skewer to make it moist. Now apply brandy by using the brush it will preserve it and give it a nice color. You can preserve the cake for months. In Pakistan we have hot weather we can refrigerate it in the summer season. But in winter we can keep the cake in room temperature.

    
Now wrap the cake in foil and keep the cake in a cool and dry place. I m going to refrigerate it for 2 or 3 weeks before serving it. It is most imported because nuts will generate their flavors. Brandy will also work to make it delicious too. You must have to make it 4 weeks before Christmas.
