                                    Lotus Biscoff Cheese Cake

 Hi, Friends 👋🤗 How are you? I hope you are doing well. Today's weather is so amazing therefor, I decided to make Lotus Biscoff cake. Is so delicious and easy to make.
I was searching for its recipe but I made it with my method. Actually whenever you make your own recipe. This will give more excitement. 
So have a look at its history. 

History of Biscoff Cake:-

Lotus Biscoff starts in 1932 in a local bakery in Lembeke, a Belgian town. The unique recipe was honed to perfection with carefully selected natural ingredients. Today, Lotus Bakeries is still family-owned and based in its hometown. And from there, the tasteful biscuit continues to conquer the world.

In this cake recipe, I have used Biscoff spread which is caramelized with the unique flavor of Lotus Biscoff biscuits.

Moreover, their unique taste is the main reason why the fame of this cookie grew rapidly. Lotus Biscoff came from a term between Biscuit and Coffee, a consuetude of eating biscuits and coffee. Their caramelized biscuit is a handful of natural ingredients with no colors and added flavor.

This cake was amazing 🤩. I made this cake first time very carefully. At last, this is in front of you. My kids were very happy to taste it. My husband was wondering and said how can you make this cake without any remort preparation. But I said if you have patience you can do everything. 
So friends let's get started ....... 😉

Ingredients for this recipe:-
Lotus Biscoff Biscuits.        250 g Pack
Butter 🧈.                              Unsalted 5 tbsp
Cream Cheese                         300 ml
Power Sugar.                          1/2 cup
Biscoff Spread.                       1/2 cup
Whipped Cream.                    1/2 +2 Tbsp

Chopper or ziplock bag and rolling pin.

Method:-
Prepare the spring pan with butter paper which should be fixed in the bottom. Grease it with butter 🧈. So that cake will remove easily. 

Preparation of Cake Base:-

First, add 250 grams of biscoff biscuits in a chopper or you can crush them in a ziplock bag and rolling pin. Crush them properly then add unsalted melted butter 🧈. Crush them again. Mix well after adding them in a mixing bowl. Now separate 5 tbsp of cursed biscuits roughly. 
Add the rest of the mixture into the cake pan and press it gently. Make the even-out base in the pan. I use the bottom of the glass to plane the surface of the mixture. 

You can use the lid of the bottle or any tool. Now refrigerate it for 30 minutes or you can place it in the freezer for 15 minutes. I placed it in the freezer and it was all set.

Preparation of Frosting:-

In a mixing bowl add 300 ml cream cheese at room temperature. Now add powdered sugar about 1/2 cup. Add 1/2 cup Biscoff Spread. Mix well until well combined. 
Add cold whipped cream to the other bowl. Beat the cream in stiff peaks form. Now add it to the cream cheese mixture and beat it too. Add the whipped cream little by little and mix well. Make a nice mixture then add this cream mixture into the cake pan after 30 minutes. Spread it throughout the cake base and plane the surface nicely with a spatula. 
Now wrap it with cling wrap 🌯. Refrigerate the cake overnight or for 8 hours. 
24 hours of looking later, remove the cling wrap and add melted Biscoff Spread which I microwave for 30 seconds. Pour out the melted Biscoff Spread on top and spread it nicely. After it sprinkle the crushed biscuits which we separated before. 
                            


Now refrigerate it again for 30 minutes more. After 30 minutes release the cake from the pan with a knife and remove the pan carefully. Place the cake on the plate with a palette knife and clear the edges of the cake. Now melt the biscoff spread in the microwave for 30 seconds and spread it on the edges of the cake. It will fall down so it will look so beautiful. Now our Biscoff Cheesecake is ready.

Now you can decorate it with biscoff cookies or whatever you like to decorate it. Serve this cake with coffee or tea and enjoy...........!!!!!
