Ingredients:

  • Bitter Melon (Karela): 1 kg medium-sized
  • Minced meat (keema): 1 kg (can use lamb, beef, or chicken)
  • Onion: 2 large, finely chopped
  • Tomatoes: 2 medium-sized, finely chopped
  • Ginger-garlic paste: 1,1 tablespoon
  • Green chilies: 15 -20 finely chopped (adjust according to spice preference)
  • Turmeric powder: 1/2 teaspoon
  • Coriander powder: 1/2 tablespoon
  • Red chili powder: 1 tablespoon (adjust to taste)
  • Kashmiri Red Chili Powder: 1/2 Tbsp
  • Salt: to taste
  • Oil: 1/2  Cup
  • Fresh coriander leaves: for garnish
  • Grind all in a blender nicely.

Instructions:

  1. Preparation of Bitter Gourd:

    • Wash the bitter gourd thoroughly. Cut off the tops and scrape the outer skin lightly using a knife or a peeler. This helps reduce some of the bitterness.
    • Slit each bitter gourd lengthwise. Remove the seeds and pith using a spoon, creating a hollow cavity. Sprinkle salt inside the gourds and set them aside for about 1 hour. This step helps in reducing the bitterness further.
  2. Cooking the Stuffed Keema:

    •  Add 1 kg keema into a deep pan. Add grinded ingredients above.
    • Cook it until the water dries.
    • Turn off the heat and let the stuffing cool down to room temperature.
  3. Stuffing and Cooking Bhat Karela:

    • Gently squeeze out any excess water from the salted bitter melons. Stuff each bitter gourd with the prepared keema mixture, ensuring they are evenly filled.
    • Bind tightly all stuffed karela with thick thread.
  4. Cooking Skin Of The Karela:

    • Heat the remaining 2 tablespoons of oil in a wide pan. Place the washed skin of the bitter melons gently in the pan.
    • Fry it until brown in color.
    • Once cooked, add it to the roasted keema.
  5. Cooking Stuffed Karela:- Add 2 cups of oil to a frying pan. fry them until brown in color.

  6. Steam the Stuffed Karela with keema:- Heat the keema and add fried stuffed karela on the top. Cover it with a lid and steam them for 10 minutes. Mix well a bit at last.

  7. Garnish and Serve:- Sprinkle fresh chopped parsley and dish out it in a lovely tray. Serve it with roti, naan, and with raita. Enjoy :-)
