Step 1: Assessing the Milk Before we begin, it's crucial to ensure that the expired milk is still safe to use. While the expiration date is a helpful guideline, it's not always an accurate indicator of milk's freshness. Give the milk a sniff and a taste test—if it smells sour or tastes off, it's best to discard it. However, if it still seems relatively okay, it's prime for our cheese-making adventure.

Step 2: Gathering Ingredients and Equipment For this recipe, you'll need:

  • Expired milk or Fresh Milk
  • Lemon juice or vinegar
  • Salt (optional)
  • Cheesecloth
  • Heavy-bottomed pot
  • Thermometer

Step 3: Curdling the Milk In a heavy-bottomed pot, heat the expired milk over medium-low heat until it reaches around 180°F (82°C). Be sure to stir frequently to prevent scorching. Once the milk reaches the desired temperature, remove it from the heat and slowly add lemon juice or vinegar while stirring gently. You'll start to see the milk curdle, with the whey separating from the curds. Let it sit for a few minutes to allow the curds to fully form.

Step 4: Draining the Curds Line a colander with cheesecloth and place it over a large bowl or sink. Carefully pour the curdled milk into the cheesecloth, allowing the whey to drain away. Once most of the whey has been drained, gather the corners of the cheesecloth and tie them together to form a bundle. Hang the bundle over the sink or bowl and let it drain for about an hour, or until the curds have reached your desired consistency.

Step 4: You will need one solution for this process. The ingredients are:-

Tatari 1 Tsp

1 Tsp white vinegar 

1 Tsp baking Soda

Add these 3 ingredients in a small bowl and mix them until the transplants condition. Now add these things too.

Curd / Chees 

I/3 cup butter

1/3 cup fresh milk

Blend all the ingredients into the blender until smooth in texture.

Step 5: Press the Cheese After draining, unwrap the cheesecloth bundle and transfer the curds to a clean surface. Add salt to taste, if desired, and gently knead the curds to distribute the salt evenly. Then, place the curds into a mold or shape them into a block using your hands. If you don't have a mold, you can use a small container lined with plastic wrap. Place a weight on top of the curds to press them into a compact shape. 

Step 6: Now in a double boiler add this mixture to the glass pan and cook it until flexible and smooth texture. add this mixture to the container by applying some oil with a brush and refrigerate it in the freezer overnight to set. Next day make slices and enjoy it with fried bread or with fresh salad and many more. You can make pizza or much more.
