Introduction:

 Biryani, with its aromatic spices and tender meats, holds a special place in the hearts and palates of food enthusiasts worldwide. Among the diverse range of biryanis, Chicken Chatpati Dum Biryani stands out for its tantalizing flavors and unique blend of spices. This article delves into the art of preparing this delectable dish, perfect for gatherings, celebrations, or simply treating yourself to a culinary delight.


Ingredients:

  1. Chicken - 500g, cut into pieces
  2. Basmati rice - 2 cups, soaked for 30 minutes
  3. Onions - 6-7 large, thinly sliced and fried
  4. Tomatoes - 4-6 medium, finely chopped
  5. Ginger-garlic paste - 4 tablespoons
  6. Yogurt - 1 cup
  7. Green chilies - 3-4, slit lengthwise or not
  8. Fresh coriander leaves - a cupful, of chopped
  9. Fresh mint leaves - a cupful, of chopped
  10. Garam masala powder - 1 teaspoon
  11. Red chili powder - 1, 1/2 tablespoon
  12. Turmeric powder - 1/2 teaspoon
  13. Cumin seeds - 1 teaspoon
  14. Bay leaves  2 -3 
  15. Cloves  4-5
  16. Dried Plums 6-8
  17.  Saffron leaves (Soaked)
  18. Cinnamon stick - 1 -2 (1 inch)
  19. Green Chilies 6-7 (crushed)
  20. Cardamom pods 5-6
  21. Salt - to taste I add 1,1/2 Tbap
  22. Ghee or clarified butter - 3 - 4 tablespoons
  23. Oil - 1 cup tablespoons
  Preparation Method:
  1. Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it marinate for at least 1 hour in the refrigerator or at room temperature. Add ghee and oil too. Add cumin seeds, bay leaves, cloves, cinnamon sticks, and cardamom pods. Sauté until fragrant. Add sliced fried onions. 

  2. Soak some saffron leaves too.

  3. Add chopped tomatoes, green chilies, garam masala powder, and half of the chopped coriander and mint leaves. In a separate pot, bring water to a boil. Add soaked rice and cook until it is 70% done. Drain the water and keep the rice aside.

  4. Preparation of Rice:-

  5.  Take a heavy-bottomed pan, Add 1-liter of water, and add cumin seeds, black cardamom, mint leaves, 1 tbsp oil, and salt to taste. When water boils add washed and soaked rice. Mix well and don't cook them properly. Rains the water and add them to the top of the marinated chicken.

  6. Sprinkle the remaining chopped coriander and mint leaves over the rice.

  7. Cover the pan with a tight-fitting lid. Place a heavy object on top of the lid (dum) to seal it tightly.

  8. Cook on low heat for about 30 - 45 minutes or until the rice is fully cooked and aromatic steam escapes from the sides.

  9. Once done, gently fluff up the biryani with a spatula.

  10. Serve hot with raita (yogurt dip) and salad.
