Kaju Katli is a classic South Asian sweet made with premium cashews, sugar, and a touch of desi ghee. With this easy recipe, you will get that perfect soft, shiny, and melt-in-the-mouth texture right at home, without any complicated sugar syrup consistency checks.

🍳 INGREDIENTS FOR KAJU KATLI

• Cashew Nuts (Kaju): 250 grams (approx. 2 cups)
• Sugar: 3/4 Cup
• Water: 1/2 Cup
• Desi Ghee: 1 TSP
• Cardamom Powder (Elaichi): 1/4 TSP (Optional)
• Edible Silver Leaf (Vark): For decoration (Optional)

👩🍳 STEP-BY-STEP INSTRUCTIONS

Step 1: Making the Cashew Powder
1. Take 250 grams of clean, dry cashew nuts. Put them in a blender or grinder.
2. Grind them in "Pulse" mode (turn on and off quickly) to make a fine powder. Do not over-grind, or the cashews will release oil and turn into paste.
3. Sift the cashew powder through a strainer to remove any large chunks.
Step 2: Preparing the Sugar Syrup
1. In a non-stick pan, add 3/4 cup of sugar and 1/2 cup of water.
2. Melt the sugar on medium heat. Keep stirring until the sugar dissolves completely and the mixture starts to bubble (no need to check for strings).
Step 3: Cooking the Kaju Paste
1. Reduce the heat to low and gradually add the sifted cashew powder into the sugar syrup. Mix continuously to avoid lumps.
2. Cook the mixture on low heat for about 7-9 minutes, stirring non-stop.
3. When the dough starts leaving the sides of the pan and gathers together, add 1 teaspoon of desi ghee and cardamom powder. Mix well and turn off the heat.
Step 4: Kneading and Shaping the Barfi
1. Transfer the warm dough onto a sheet of parchment paper or a greased flat plate.
2. Let it cool for 2 minutes, then gently knead the dough with your hands (or using the paper) until it becomes smooth, soft, and shiny.
3. Place another parchment paper on top and roll the dough with a rolling pin (belan) to about 3-4 mm thickness.
4. Optional: Apply edible silver leaf (vark) on top for a traditional bakery look.
Step 5: Cutting into Diamond Shapes
1. Let it cool completely for 10-15 minutes.
2. Use a sharp knife or pizza cutter to cut into classic diamond shapes.
